Beetroot and kohlrabi coleslaw

Ingredients | Serves 4 | Cook 20 Mins

  • Raw beetroot, grated
  • kohlrabi, grated
  • carrot, gated
  • mayonnaise
  • plain yoghurt
  • apple, grated
  • toasted pumpkin seeds
  • salt and pepper


  • Add roughly equal measures of the grated beetroot, kohl rabi and carrot to fill a dessert bowl
  • Add the grated apple and a handful of seeds
  • Mix together with two tablespoons of mayonnaise and two more of yoghurt
  • Season with salt and pepper
