Autumn is traditionally a time of plenty for veg bags, filled with an array of root veg, pumpkins, cabbages and plenty of squash. It’s a time for soups and warming meals. Here are a few of the Better Food Traders favourites.
Cavolo nero spaghetti
This light meat free pasta dish is packed with iron-rich kale and full of flavour, blitzing the kale into a pesto with garlic and chili flakes and a sprinkling of parmesan.
Roasted Squash with Tahini Yoghurt
This recipe uses crown prince, which is often in veg bags throughout the autumn, but it would work with any other squash or pumpkin, such as red kuri. This is more of a recipe idea than a fully detailed recipe – have fun experimenting!
Pumpkin, chickpea and coconut curry
Got lots of Pumpkin & need a little warm-me-up recipe.
Apple and Celeriac Soup
Make the most of this hearty autumn vegetable with a warming soup.
